Crock Pot Bread Pudding
No lie, it is really good! I got this recipe from my cousin Pam. I made it for the first time for last Sunday’s Potluck. It must have been good because they ate all of it. This is the basic recipe:
Pudding:
8 generous cups of bread (any kind) torn in chunks
¾ cup sugar
1/3 cup brown sugar
1 tsp vanilla
¼ tsp nutmeg
4 eggs
2 cups milk
½ stick melted butter
(You can add nuts or raisins or anything along those lines with the bread.)
Combine all the ingredients except for the bread in a bowl.
Put bread in a greased crock pot
Pour liquid mixture over bread
Cook on low for 3 to 4 hours
Sauce:
1½ sticks butter
2 cups powdered sugar
½ cup brown sugar
¼ tsp of whatever flavoring or extract you like
½ tsp of vanilla
(1/2 cup nuts optional)
Heat to combine and thicken
Serve on the side to pour over pudding when it is dished out.
I used ¼ tsp vanilla and ½ tsp of almond extract to flavor my sauce. That worked really well and tasted like pralines.
When I made this I doubled the recipe and it filled up my big crock pot. Next time I don’t think I will double the sauce, it is really rich, a little goes a long way. I used plain white bread this time; I would like to try it with a sweet bread. Next time I will also add nuts. And I was wondering how it would taste with some cinnamon in it or cinnamon raisin bread...hummm...
I got up early and started the pudding on high for about an hour. Then it sat on low for 3 hours during church. That worked out really well, just make sure to stir it to get all the bread nice and soaked in the sugar/butter/egg mixture. Oh and reheat the sauce before serving. It does not have to be refrigerated while the pudding is cooking.
